Vegetarian Meatball Recipe Cooking Video
Here’s another request from my faithful, beautiful, lean, and sexy Live Lean TV viewers…well actually this request was from a dude so I’ll just call him faithful and lean!
The request was for a cooking video showing how to create a delicious but healthy dish using LENTILS!
Now I admit, I don’t use lentils very often. I don’t know why…maybe it was because I never had them as a kid…who knows! But what I do know is lentils are loaded with fiber and when complemented with brown rice…make a complete protein that contains all the essential muscle building amino acids. Thumbs up to muscle building…especially if you’re a female!
So rather than start the recipe creation process from scratch, I reached out to my friend Lindsay, at http://www.theleangreenbean.com. She was glad to hook us up with her Meatless Meatballs recipe. Alright back to the lentils…how do we turn these weird looking things into a delicious recipe that matches the consistency and taste of real meat! Follow along with my cooking video!
Here are the ingredients and instructions…
Vegetarian Meatless Meatballs Ingredients:
- 2 cups of cooked lentils
- 2 eggs
- 1/3 cup of bread crumbs
- 1/2 cup of ricotta cheese
- 1/2 cup of cooked brown rice
- 1 tsp of paprika
- 1 tsp of oregano
- black pepper
- 2 diced cloves of garlic
- 1/3 cup of diced onion
Vegetarian Meatless Meatballs Instructions:
1. Pre-heat oven to 375F.
2. Blend brown rice and lentils together.
3. Add mixture to a large bowl and add in the remaining ingredients.
4. Mix together with hands and make meatballs.
5. Add to a tin foil lined baking sheet and bake for 15 mins. Flip sides. Then bake for a final 10 mins.
