Although I’d never recommend eating only one type of vegetable, his question sparked a theme for a challenge.
I’ve branded it the “7 Day Popeye Challenge”. Can you figure out which vegetable I choose?

To increase your consumption of spinach, try adding it to this super powered Green Drink recipe. It’s loaded with antioxidants, protein, vitamins, fiber, phytonutrients, probiotics, iron, and many other nutrients.
- 1 1/2 cups of water
- handful of fresh or frozen spinach
